Maple-Sriracha Roasted Cauliflower

Happy Monday!

We had such a great weekend seeing friends, watching Harry Potter movies, and going for walks! Yesterday we did about 3.5 miles and it knocked Beta o.u.t. 🙂  There are SO many beautiful trails for dogs out here, and a few so close to our apartment! We’ll be hitting up here lots in the future!


A few of you had asked about this cauliflower recipe I had made a while ago and I decided to share!  I found the link via pinterest (of course) and was intrigued because we have been doing a lot with sriracha lately.  It was easy and so hard to stop- I think I had more than half the plate (I do that to poor Chris too often).  It wasn’t overly spicy which is better for me, and I think the maple syrup gave it just the right sweetness.  I also love the consistency of baked cauliflower.


The only problem I had was while roasting the vegetables it caused so much smoke. We had to take our fire alarm off the ceiling while we baked this because it went off every time we opened the oven.  It makes us so nervous when we roast things with maple syrup, which we do quite often because of our New England roots.  Does anyone have any experience with this or tips?  I’d LOVE to know!

Stir-fry; A Rolfs Staple

Happy Friday!!!

Although we’ve had quite the week adjusting to having Beta in the house, we have had great success with crate training- I was able to leave today for 6 minutes outside and she didn’t really bark or whine or PEE! Yay!  Knock on wood!

I have found out (on accident) some of her likes and dislikes this week.  For example:


  • Brussel Sprouts (my girl!)
  • Hummus
  • Cabbage


  • Kale
  • The Lumineers

It’s kind of weird, but it’s the truth.  She’s our little weirdo.

Last night was really the first night I really got to cook this week.  I’ve been craving Chinese food for a week now, so I whipped up what I had to make this Chicken and Broccoli Stir Fry.  I did alter it a little bit but it was SO delicious and definitely hit the spot so I had to share.  I did not have scallions or hoisin, and used only one chicken breast and lots of extra broccoli. I prefer more broccoli and little meat in my stir fry.  I also topped it with chow mein noodles because well, chow mein noodles.

I made so much we have leftovers for tonight!  Which is good because we are off to our first Puppy Behaviors class tonight! Wish us luck!

Thai Chicken Salad

I’m just going to cut right to the chase and introduce you to my new favorite lunch: this Healthy Thai Chicken Salad is absolutely amazing. It’s easy to whip up, healthy, and delicious!! Packed full of protein! I could go on and on, but I’ll stop with this: I get way too excited whenever I have the opportunity to make my own salad dressing.

Today I gobbled this up and I still have some leftover for lunch tomorrow 🙂



Today I started as always with my ab workout, and then onto the Dirty 30 21 Day Fix DVD.  It’s been a while and I have a feeling I’ll be hurting a little tomorrow.  After that I convinced myself to go for a run even though the wind was whipping through our neighborhood. I was just going to bang out a quick mile but once I got going I decided to go for two. My first mile was great (I think the wind was guiding me) at a 9:43 pace, and on the way back I lost a little steam and had to fight the last 1/4 mile head on against the wind, bringing my 2nd mile time to a little over 10:00.  All-in-all very successful and I’m glad I went out and pushed myself.
